I've been in hot water with my mom ever since we removed the Olive Toasted Pecan Sourdough from the menu. It was her breakfast of choice each morning, so since then, I've been working hard to get back in her good graces.

 

What finally got me back on her good side?? The Brown Butter Caramel Knot. She got to taste it for the first time this weekend, and after her first bite, she declared that all was forgiven. Not just my missteps from the Olive Sourdough, but alllllll was forgiven! Hooray!! My slate has been wiped clean! All those times I snuck out of the house as a teenager back in Kansas? Forgiven. Or when I splattered her 2 seater sports car while painting my "sculptures?"..... Forgiven.

This ooey-gooey creation is enrobed in our house-made caramel sauce. Brown butter serves as a foundation for the sauce, making it taste almost nutty. It's cooked low and slow with organic cane sugar until it develops a rich, dark color and thickens just enough to drip slowly off the knot, but remains thin enough to seep into all the crevices of the knot, so there is caramel richness in every bite. We top it with a light pinch of Maldon Sea Salt and a caramel brittle.
