THE TAHITIAN VANILLA KNOT

Our Tahitian Vanilla Knot is an IZOLA family favorite. We steep organic milk with whole Tahitian vanilla beans until the full flavor of the bean is expressed in the milk. We then use the vanilla-scented milk to create the dough for the Tahitian Vanilla Knot where it is combined with organic flour from Utah, organic sugar, fresh yeast, and butter. The resulting dough is super silky, smells like heaven (slightly sweet with notes of vanilla wafting through the air) and is speckled with vanilla bean throughout. Our Dojo team laminates Beurre D'Isigny butter between the layers of the croissant dough before hand cutting and hand braiding each Tahitian Vanilla Knot.

 

We proof the knots overnight. The overnight proof wakes the yeast up and plumps the knots. In the morning our Bake team gives them an extra little bump of heat and steam to ensure ultimate fluffiness before they into our Salva ovens.

 

Each knot is then hand dipped into our Tahitian vanilla icing. Our house made icing packs loads of vanilla caviar, all hand scraped from MORE whole Tahitian Vanilla beans.

 

The result? A fluffy and delicate, lightly sweet pastry that hits you with the scent of vanilla throughout.

WE ONLY HAVE TODAY

 

Hello! Jenny here, doing a little takeover of the newsletter...There's been something on my mind these past couple of weeks that I wanted to share. Jeffrey and I recently attended my uncle Jio Jio's funeral. We met such kind people that day who Jio Jio had touched in one way or another, and it was one of these friends, Karl, who reminded us that we only have today. Karl had recently made the commitment to himself that he would no longer put things off like calling a friend to see how they were doing and that he would listen to what he calls his "whispers."

 

 We've all had them - that gentle whisper that crosses your mind to call your mom or the thought that it's a beautiful day to pull away briefly from work and go out for that run. It was listening to one of these whispers that I called my uncle, which would turn out to be the last time I would speak to him.

 

So over these past couple of weeks I've tried to get better at listening to those whispers. It can be hard when we're faced with a never ending to do list, or when a deadline is fast approaching. And to be honest, I still don't always listen to them...

 

But I have yet to regret when I do - like last week when Jeffrey and I did something crazy and took off work early to take our pup Sam to the beach. It was his very first time seeing the ocean and it was MAGICAL. Seeing the world through his eyes was a reminder of the beauty in the simplest things around us.

 

I share this in hopes that we all take a moment to connect with those around us. It's why I love what IZOLA has become - I love seeing our community gather over a shared passion and slowing down, if even for just a moment, to enjoy a simple pleasure and more importantly, to enjoy great company.

 

I never got to meet Jeffrey's grandmother Izola, but from what I have heard about her, she would take some much joy in knowing that a place named after her is where people from all backgrounds gather, a place where folks linger and enjoy great company.


 

We're super excited to announce that IZOLA has been certified as a Living Wage for US Employer. This means that every member of our team in our

organization earns a living wage based on the cost of living in our zone in the United States. We still have a lot more work to do - San Diego is a beautiful place to live, but an expensive one too. The work that we have been focusing on to bring IZOLA Main to fruition will help make further inroads for our team.
