OLIVES AND CHOCOLATE?!
I know, I know....who pairs olives with chocolate? Sounds a little crazy, but trust me. Our Moroccan Black Olive Chocolate Croissant (the "MBO" as our team calls it) has always been a bit of a sleeper hit for us. Once people try it, they're sold.
We use a buckwheat dough spiked with some of our sourdough starter, then we add chopped black Beldi olives, all of which gives this croissant a slightly nutty, more savory flavor. And with its lower butter to dough ratio, the Beurre D'Isigny takes a back seat to really allow the nuttiness of the buckwheat and the brininess of the olives to shine.
We add two bars of Valrhona chocolate to the equation - just a hint of sweetness.

It is with immense pleasure that we congratulate team member Alik on his promotion to Front of House Lead, joining the ranks of our two other stellar leads Adrian and Dani.
For those of you who've had the pleasure of meeting Alik at the bakeshop, you've seen his hustle, his joyful spirit, and his passion for creating memorable guest experiences.
Alik is approaching his one year anniversary at IZOLA and has grown to embody the most important qualities of an IZOLA team member and lead - kindness, work ethic, accountability, initiative, and taking decisive action quickly.
Chef Alik, you have earned the title; we are proud of you and look forward to your positive influence on guest experiences here at IZOLA and the team at large.
