Wild on the Grill

SUMMERTIME GRILLIN'

 

My go-to fast and easy meal is to just toss something on the grill. Slather everything in olive oil, a sprinkling of kosher salt, freshly ground black pepper and voilà, dinner's on the table in minutes.

 

The star for me of course is the grilled sourdough because it's not a meal until you add the bread. 😉

 

To prep: I slice it thick (about 1.5 - 2 cm), bathe it in olive oil (both on the crumb and make sure you get it all over the crust too), and sprinkle some kosher salt or Maldon on both sides.

To grill: I set it on the top rack of our grill and let it toast up as I've got the steak and veggies going. Flip after a few minutes to get the other side crispy.

 

The result? Slathering it in olive oil almost fries the outide of the bread - it creates a delicate and lacy crispness. But because I slice it thick, the inside stays custardy and soft.

 

This method also works magic on a stale loaf of sourdough. When we grilled this weekend, all we had was a loaf that had been sitting in the fridge for a week and grilling it brought it back to its full glory!
