THE CLASSIC


IZOLA is built upon two simple things — croissants and sourdough. Sometimes, we'll get asked why we don't serve salads, sandwiches, cakes, cookies, the list goes on. The simple reason is that we just want to serve food that we know we can do well and that we love. If we don't absolutely love it, it doesn't make it to our menu.

 

Take our traditional croissant. It began 4 years ago with a recipe we found on the side of a flour bag. Having not had any culinary training, we just tested and failed (700+ times) our way to the croissant we serve today. We would change a single element at a time - whether it was the temperature of the room that we were rolling in, the type of butter or flour we used, the thickness we would roll the dough to, whether we froze the dough between each step or let it rest in the refrigerator, each step was tested and intentional. It only took us hundreds and hundreds of iterations and maybe a few tears!

 

 

And today the IZOLA croissant takes our Dojo team 4 days to make, resulting in 96 layers of buttery goodness. Topped with a sprinkling of Maldon sea salt and baked until it is a deep golden brown.

 

We are open every Tuesday - Saturday, 7a-2p, with live music every Saturday.

 

Either pop on by or place an order ahead of time. If you have a pre-order, you can also use IZOLA Drive By — just double park outside, give us a call at 619-289-8358, and we'll deliver your croissant and cappuccino to you in your car!

INVESTING IN OUR FUTURE


Our mission at IZOLA is to change the way that Americans think about croissants and sourdough. As we take each step toward this goal, our decisions are framed by our justice-based values and the guest experience.

 

The 5 key areas that guide our justice-based decisions are:

As we raise funds to build IZOLA Main - our new zero-emission production factory in City Heights - we are driven by how this step will help support our justice goals....Like the increased efficiency gains that will provide us the opportunity to reinvest back into our team through higher wages, and more career development and training. Our current leadership team is diverse - 67% female, 50% BIPOC, and 17% LGBTQIA+ and our investment in IZOLA Main allows us to scale this further. Investing in material handling for our production will allow us to remove thousands of pounds of plastic and paper from ever being produced. And there is so much more...

We had a blast this past Saturday welcoming live music back to IZOLA. Thank you to @maybear.wav for coordinating the inaugural line up here at IZOLA Island, and to @julie_seely and @leateamusic

for performing.

 

IZOLA is a community space, a place where neighbors, friends, family, lovers, strangers, musicians, poets, kids, and storytellers can gather.

IT'S OFFICIAL! 


IZOLA Main has a PRJ number at the City of San Diego's Development Services Department! This means our permit application package has officially been accepted.

 

And our Department of Environmental Health and Quality plan check has been approved by the County of San Diego.

Wow...what a ride so far. We just finished our fourth week here at IZOLA Island, and today we had a line out to the street and beyond. I have to say that even as we stumble and work to find our way to serve everyone, our community responded back to us with unfailing grace and support. Even after waiting 30 minutes for coffee, people wouldn't take their money back...I don't know what we did to earn it, but we are grateful.

 

And then when I look at the collection of photos of our team, I am even more humbled. They put their heart and soul in each day, all in the service of creating delight for you, our customers.

 

We're working to improve each day and look forward to experiencing this journey with each of you as we laugh with you, cry with you, and have true fellowship here over bread, butter and coffee.

NEW INVESTOR CONVO....MONDAY


Join Jenny and me this Monday at 6:30p on Google Meet for a live conversation about IZOLA Future and our new capital campaign.

 

We'll share with you why we're raising capital to expand IZOLA's production capabilities, improve our IT, and expand our impact. Our factory project in City Heights is well underway, we submitted our 186 page architectural and engineering plan set to the city. We plan to begin construction in about 6 months. This project will provide up to a 20x increase in our production capacity AND improve our quality. Additionally we're expanding our IT capabilities to better serve our customers. And we're taking action on our 5 areas of social justice, including economic, LGBTQIA+, environmental, gender, and racial justice.

 

The conversation will be super informal - come with questions, come in your jammies, call in while you're making dinner, anything goes! We look forward to chatting with you!
