BAKESHOP UPDATES While the first few days of the closure were dedicated to assisting with job placement, Jenny and I have been hustling on a few other fronts as well.... We've asked a few members of our leadership team to stay on during this closure and the small but mighty team has hit the ground running. Together they have already:

  • Tested 16 different croissant and pastry flavors

  • Tested 5 new sourdough flavors

  • Tested 1 new type of bread

The output from the team has been inspiring. It has been fun and exciting to be exploring new flavor combinations and we can't wait for the wider IZOLA Fam to try them out when we reopen.

I, as well as our Design Assistant Alejandra, have also been hyper-focused on the renovation we had planned for January. We don't have a lot of wiggle room to move the construction up any further, but if it's possible, we're making that happen. Jenny and I are headed to Europe next week to inspect our new ovens and proofers as they come off the line at Salva. Stay tuned for more reno updates!

MAYBEAR 9-10a

Maybear is a singer-songwriter and indie rock musician based in San Diego. Some of her influences are Clairo, Phoebe Bridgers and Raveena.

 SARA ANDREA 11a-12p Sara DeMoranville, or “Sara Andrea," is a singer-songwriter who writes and performs acoustic songs and produces electronic-pop music. Originally from Rhode Island and currently living in San Diego, her music is inspired by life near the ocean and the relationships that have formed around her.

LEATEA 12-1p Leatea (San Diego native Dylann Jelden) has been a musician all her life, beginning with classical violin at age 4. She began writing songs and incorporating guitar in high school. She performs regularly in San Diego.

CELEBRATE Happy birthday to Joshua! Joshua, pictured on the far right, is our night shift croissant production assistant. He's coming up soon on his one year anniversary with IZOLA and we are grateful for your contributions Joshua! Thanks to Dojo Lead Lidia for taking the time to organize a nice celebration for the Dojo team. It's always busy at the bakeshop and our teams are working hard, but we are grateful for this reminder of how important it is for us to slow down, celebrate and appreciate one another. Admittedly this is something that Jenny and I still need to work on, but what we've learned is to seize even the smallest moments. Whether that's taking a 15 minute break and going for a walk around the block together with our pup Sam, or even just lingering for 30 seconds longer when giving each other a hug goodbye.
