IZOLA
THE IZOLA CLASSIC
You can't go wrong with the classic IZOLA Butter Croissant. For the days you're craving something sweet, just add a dab of butter and some preserves. On other days they are unctuous and delightful on their own with the luxuriousness of French butter and Maldon sea salt giving every bite a little pop.
Â
Our Dojo team takes 4 days to create our handcrafted croissants. The team layers butter from Normandy with our croissant dough to finish with 96 individual layers of butter that when proofed, then baked, expand to create a honeycomb texture that is an architectural marvel in and of itself.

IZOLA
THE TAHITIAN VANILLA KNOT
Pre-orders for this week are open now!
Â
Our Tahitian Vanilla Knot is an IZOLA family favorite. We steep organic milk with whole Tahitian vanilla beans until the full flavor of the bean is expressed in the milk. We then use the vanilla-scented milk to create the dough for the Tahitian Vanilla Knot where it is combined with organic flour from Utah, organic sugar, fresh yeast, and butter. The resulting dough is super silky, smells like heaven (slightly sweet with notes of vanilla wafting through the air) and is speckled with vanilla bean throughout. Our Dojo team laminates Beurre D'Isigny butter between the layers of the croissant dough before hand cutting and hand braiding each Tahitian Vanilla Knot.
Â
We proof the knots overnight. The overnight proof wakes the yeast up and plumps the knots. In the morning our Bake team gives them an extra little bump of heat and steam to ensure ultimate fluffiness before they into our Salva ovens.
Â
Each knot is then hand dipped into our Tahitian vanilla icing. Our house made icing packs loads of vanilla caviar, all hand scraped from MORE whole Tahitian Vanilla beans.
Â
The result? A fluffy and delicate, lightly sweet pastry that hits you with the scent of vanilla throughout.

THANK YOU...
Jenny and I are humbled each and every day by the support, love, and passion we've found in this community. As we approach the last hour of our 2nd round of fundraising, we want to take a moment to thank you.
Â
We have made a lot of mistakes along the way, and the IZOLA family continues to show up and help carry us forward. I hope you've seen that as we make mistakes, we learn from them. At IZOLA we say, "To err is human, to recover well is IZOLA." It's how we lead our team and how we live our lives.
Â
It's because of you that we'll get to continue to carry the IZOLA mission forward.
Â
If you have yet to join and would like to, we're down to the last few minutes of this round (closes at MIDNIGHT EASTERN TIME TONIGHT). We're at $972k right now - help push us over $1.0M!
Â
Come join us in this grand adventure.
Â
Cheers!
Jeffrey and Jenny

WE ONLY HAVE TODAY
Â
Hello! Jenny here, doing a little takeover of the newsletter...There's been something on my mind these past couple of weeks that I wanted to share. Jeffrey and I recently attended my uncle Jio Jio's funeral. We met such kind people that day who Jio Jio had touched in one way or another, and it was one of these friends, Karl, who reminded us that we only have today. Karl had recently made the commitment to himself that he would no longer put things off like calling a friend to see how they were doing and that he would listen to what he calls his "whispers."
Â
We've all had them - that gentle whisper that crosses your mind to call your mom or the thought that it's a beautiful day to pull away briefly from work and go out for that run. It was listening to one of these whispers that I called my uncle, which would turn out to be the last time I would speak to him.
Â
So over these past couple of weeks I've tried to get better at listening to those whispers. It can be hard when we're faced with a never ending to do list, or when a deadline is fast approaching. And to be honest, I still don't always listen to them...
Â
But I have yet to regret when I do - like last week when Jeffrey and I did something crazy and took off work early to take our pup Sam to the beach. It was his very first time seeing the ocean and it was MAGICAL. Seeing the world through his eyes was a reminder of the beauty in the simplest things around us.
Â
I share this in hopes that we all take a moment to connect with those around us. It's why I love what IZOLA has become - I love seeing our community gather over a shared passion and slowing down, if even for just a moment, to enjoy a simple pleasure and more importantly, to enjoy great company.
Â
I never got to meet Jeffrey's grandmother Izola, but from what I have heard about her, she would take some much joy in knowing that a place named after her is where people from all backgrounds gather, a place where folks linger and enjoy great company.
We're super excited to announce that IZOLA has been certified as a Living Wage for US Employer. This means that every member of our team in our
organization earns a living wage based on the cost of living in our zone in the United States. We still have a lot more work to do - San Diego is a beautiful place to live, but an expensive one too. The work that we have been focusing on to bring IZOLA Main to fruition will help make further inroads for our team.

IZOLA
TWO DAYS LEFT!
The building behind Jenny and me above is the future home of IZOLA Main. We took this photo right after closing on the property. We might be looking a little tired after investing 6 months of effort to make it happen, but we were (and still are) so stoked about what this building means for the future of IZOLA.
Â
What does the next stage of IZOLA look like? Increased production (up to 20x) so that we have your favorites coming hot from the oven all day long. Increased distribution channels like an IZOLA Bake Truck at a farmer's market near you. Or what about IZOLA Bake at Home via UPS Mail for the Orange County and Los Angeles fans out there?
We are currently offering equity investment in IZOLA so that the community can join in and help take IZOLA to the next level. Join our 275 investors who have already become owners in IZOLA alongside Jenny and me.
Â
Round 2 of our investment campaign is only open for another TWO days, closing January 31st. If you haven’t already, check it out and learn how you could become an owner via our equity offering: INVEST IN IZOLA.
